Kanimi Almondine
Ingredients:
2 Tbsp butter
¼ cup slivered almonds
2 8 oz. packages Crab Smart Natural flakes
Tbsp. lemon juice
½ tsp. dill weed
¼ tsp. salt
¼ tsp. pepper
¼ tsp paprika
Directions:
1) In a small pan heat butter and almonds over medium heat until almonds are a golden brown. Break the crab into flakes in a microwaveable dish; Top with the almond mixture.
2) Combine the lemon juice, dill, salt and pepper; drizzle it over the flakes. Sprinkle lightly with paprika. Cover and microwave on high for 3-4 minutes until fully heated.
Kanimi Tacos
Ingredients:
2 8 oz. packages Crab Smart Natural flakes
1/2 -1 Tbsp. canola or olive oil
1 – 2 tsp. taco seasoning
½ pound finely shredded red cabbage
¾ cup tartar sauce
¾ cup salsa
10 corn tortillas
Directions:
1) Heat the oil in a sauté pan at medium-high heat. Add the surimi crab flakes and sprinkle on the taco seasoning. Cook 3-4 min. turning often. Remove flakes from the pan and set aside.
2) Heat the tortillas briefly in the pan at medium temperature. Fill them with the seasoned seafood flakes, shredded cabbage, tartar sauce and salsa to serve.
Lobster Chowder
Ingredients:
4 Tbsp. butter
½ bunch green onions chopped; (about ½ cup)
2 8 oz. packages Lobster Smart Natural flakes
1 (10.75 oz.) can Cream of Potato condensed soup
10 oz. half and half (or milk)
5 oz. water
½ cup frozen corn
2 oz. cream cheese
1 or 2 pinches cayenne (or to taste)
Directions:
1) Saute flakes or bites in butter for 2-3 min.; add chopped green onion and sauté 1-2 min. more. (Longer frying will give a firmer texture to the meat.)
2) Add contents of frying pan into a heavy bottomed sauce pan. Add soup, water, half and half, frozen corn and cream cheese. Heat to near boiling, stirring often, until cream cheese has melted. Add cayenne to taste and serve.
Note:
A combination of flake and chunk pieces also work well together. Another suggestion, if making a double recipe, is to use 1 can Cream of Mushroom and 1 can of Cream of Potato.
Kanimi Crab with Spicy Garlic Sauce
Ingredients:
2 8 oz. packages Crab Smart Natural flakes
1 Tbsp. sesame oil
1 ½ Tbsp. chili paste with garlic
¼ cup chicken stock or broth
¼ cup hoisin sauce
1 Tbsp. canola or peanut oil.
1 Tbsp. chopped garlic
Directions:
1) Combine sesame oil, chili paste, chicken stock and hoisin sauce in a bowl; blend thoroughly and set aside.
2) Heat the canola or peanut oil in a sauté pan of medium-high heat. Separate the package of surimi crab into individual flakes and carefully add them to the hot oil. Heat them 1-2 min., turning often. Add the chopped garlic, heat and turn another 1-2 minutes. Add the reserved sauce and turn to coat thoroughly.
3) Serve on a platter as an appetizer or on a bed of cooked rice as an entrée.
