Easy Thai Curry with Seafood
Chef Notes:
Green curry paste can be found in the international section of a well stocked grocery store. It is very spicy. Common size: 4 oz can. Leftover paste may be saved in a baggie in the freezer. Serve over rice. Garnish with basil or cilantro. Yield of recipe: 2-3 portions.
Ingredients:
8 oz package of Shining Ocean Surimi
1 can of coconut milk (13.5 fl oz or 400 ml)
2 Tbsp (or more, if you like it spicy) green Thai curry paste
Salt to taste
2 cups bok choy
1 cup soy bean sprouts
3 green onions sliced diagonally
Directions:
Mix curry paste and coconut milk until smooth, set aside.
Saute green onions and bok choy lightly, then add sauce, surimi seafood and sprouts.
Heat through.
