Ginger Curry Seafood Salad

Chef notes:
Serve chilled. This is a great dish for garden parties and picnics. Curry and ginger give it an exotic twist. Low fat. Low calories. Serves 4 as a side dish.

Ingredients:
8 oz package Shining Ocean surimi seafood
Grated peel of ½ lemon (optional)
2 Tbsp lemon juice
1 Tbsp honey
¼ tsp ground ginger
¼ tsp curry powder
1 cup seedless grapes halved
1 cup cantaloupe cubes
½ cup (1 medium rib) celery sliced

Directions:
Combine lemon peel, lemon juice, honey, ginger and curry in a large bowl.
Add surimi seafood, cantaloupe, grapes and celery. Toss lightly.
