Seafood Mini Pizzas

Chef Notes:
Awesome appetizers in a flash or make it a main meal with a side salad.

Yields 12 appetizers or serves 4 as a main meal. Get creative and add additional toppings, such as sautéed mushrooms, onions, green peppers etc.

Ingredients:
8 oz pack of Shining Ocean surimi seafood (crab or lobster)
6 pack of English muffins (Whole grain ones work well too)
12 Tbsp thick spaghetti sauce or vodka sauce (1 Tbsp per English muffin)
12 scant Tbsp grated mozzarella (1 Tbsp per English muffin)
Grated parmesan and/or hot pepper flakes as finishing touch if desired

Directions:
Cut English muffins in half, toast them and lay them out on a baking sheet.
Top each one with 1 Tbsp spaghetti sauce. Divide the surimi seafood in 12 portions and crumble it over the sauce. Top it off with grated mozzarella. Bake the mini pizzas at 350 F or in a toaster oven until cheese melts. Serve immediately.
