Seafood Bisque

Chef notes: Crab or Lobster Smart Natural can be used in this recipe.

This bisque is quick to prepare, since the surimi seafood is already fully cooked.

Serves 4.

Ingredients:
8 oz package surimi seafood
4 Tbsp butter
¼ cup finely sliced green onion or 1 medium onion diced
2 medium stalks celery diced
1/3 cup white flour
15 oz can clam juice
3 Tbsp tomato paste
½ cup half and half
¼ cup dry sherry
Salt and pepper to taste

Directions:
Melt butter. Gently sauté the vegetables on medium heat until they are tender, but not browned. Slowly add the clam juice stirring constantly for 2-3 minutes. Let the mixture thicken, stir occasionally. Mix the tomato paste with the sherry and half and half. Add this mixture to the soup, together with the seafood. Simmer until the seafood is heated through. Add salt and pepper to taste.
