Chef Notes:
Instead of the muffins slices of crusty French bread or toast can be used.
Other garnishing options: parsley (chopped or sprigs), green onions sliced thin, chives snipped,
cucumber slices, olives chopped or sliced, or use your imagination.

Ingredients:
Ingredients:
16 oz (two 8 oz packages) Shining Ocean surimi seafood
½ cup mayonnaise
2 Tbsp red onion minced
1 Tbsp lemon juice
½ tsp Dijon mustard
Salt and pepper to taste
4 English muffins split and toasted
2 oz mozzarella cheese grated
¼ cup carrot grated

Directions:
Combine the first six ingredients.
Spread seafood mixture on toasted bread.
Place in a preheated oven (300 F) for about 10 minutes until the cheese begins to melt.
Remove from the oven, garnish and arrange on a platter.
