Seafood Sliders
Chef Notes:
If slider rolls are not available, small dinner rolls can be substituted.
Heat and serve dinner rolls are very tasty, too. Adjust the size of the patty to the size of the roll.
If you have no immediate use for the remainder of the bunch of parsley,
chop it all and freeze in a small zip loc bag for later use.
Ingredients:
8 oz package of Shining Ocean surimi seafood, finely chopped
1 package slider rolls (usually a dozen)
1 large egg
2 Tbsp chopped parsley
1 Tbsp chopped garlic
2 tsp prepared mustard
½ tsp Old Bay seasoning (or Chef Proudhon “Seafood Magic”)
freshly ground black pepper to taste
a dash or two of Worcestershire sauce
Garnishes: lettuce leaves, sliced tomato, onion rings
Directions:
In a bowl mix the surimi, egg, parsley, garlic and seasonings.
Form patties and gently sauté in a well oiled frying pan until golden brown.
As the egg is setting, they will become a little firmer.
Carefully turn them over with a spatula and brown the second side.
Arrange garnishes and seafood patty on the bun and make a nice display of sliders on a plate.
Serve with ketchup, mayonnaise and mustard on the side.
