Summertime Seafood Tacos
Chef Notes:
Use hard taco shells or soft corn tortillas to serve up this refreshing content. Larger flour tortillas can be used if you prefer. This dish travels well to picnics or tail gate parties. Fill the shells just prior to serving.
Serves 4 as a main dish or 6-8 as an appetizer.
Ingredients:
16 oz (two 8 oz packages) Shining Ocean surimi seafood
1 cup red onion diced small (about 1 medium onion)
2 cups Roma tomatoes diced
1 cup cucumber diced
½ cup cilantro chopped
1 ½ cups sour cream
1 avocado sliced
Juice of 2 limes
Salt and pepper to taste
12 tortillas or taco shells
Directions:
In a bowl mix crab, onion, tomatoes, cucumber, cilantro, sour cream and lime juice.
Toss gently to combine without breaking up the crab.
Fill shells and garnish with avocado slices.
