Chef notes:
Crab Smart or Lobster Smart Natural may be used.
Other vegetables such as bok choi, soy bean sprouts, oyster mushrooms, bamboo sprouts or summer squash may be added or substituted.

There is plenty of dressing. It makes the rice very tasty. Serves 2 as a main meal.

Ingredients:
8 oz package surimi seafood
6 cups Napa cabbage cut into ribbons (they will shrink during cooking)
1 cup snow peas trimmed
1 medium bell pepper cut into bite size strips        

Dressing:
In a small bowl mix together:
¼ cup vegetable oil
2 Tbsp rice or apple cider vinegar
2 Tbsp brown sugar
1 Tbsp (or more if desired) soy sauce
1 Tbsp toasted sesame seeds
1 Tbsp fresh grated ginger root

Directions:
Sauté bell pepper and snow peas 2-3 minutes. Add Napa cabbage. Cook until limp. Add surimi seafood and dressing. Heat through. Serve over rice.
